Description

Aromas of peach, apricot, baking spice and a touch of toast and clove are abundant on the nose. Intense fruit flavours of orange balance the crisp acidity of this complex oak aged Icewine.

Canada is the ideal environment for making Icewine. To produce superior Icewine, summers must be hot and winters cold and sharp. Only Ontario has a winter climate cold enough to ensure an annual Icewine crop. Grapes are picked frozen at -10˚C (14°F), in the middle of the night, to capture peak quality. They are immediately pressed to extract water in the form of ice crystals, leaving only a tiny amount of pure, concentrated nectar. About three kilograms (seven pounds) of grapes are required to produce a single 0.375L bottle of Icewine—the same quantity would yield ten times as much table wine.
